Garden fresh pesto
Ingredients
1 cup fresh basil, tightly packed, washed and dried
2 tbsp pine nuts
3 cloves garlic, peeled
Salt
3 tbsp grated tasty cheese
3 tbsp grated Parmesan cheese
1/2 cup extra virgin olive oil
The Magic Begins;
In your trusty blender or food processor, drop in the pine nuts, garlic and the basil.
The aroma will start hinting of what is to come….
2. Sprinkle in a pinch of salt, add both cheeses, and drizzle in just a little of the olive oil. Blend until the mixture starts to become a smooth, emerald paste.
3. Pour in the rest of the olive oil, then give it one last quick blend - just enough to marry everything together without loosing that gorgeous texture.
Storing the treasure;
Spoon your pesto into an airtight container. It will keep in the fridge for up to a week, or you can freeze it to enjoy those summer flavours in the depths of winter.
Serving ideas;
Toss it through steaming fresh pasta, spread it on pizza bases before baking, or dollop it onto grilled vegetables, fish, or chicken. It’s the little green genie that grants endless savoury wishes.
